Grooved rigatoni get their name from the Italian "righe," meaning "lines," and are often paired with the classic tomato sauce. Gentile pasta came first in a blind taste test carried out by the prestigious Italian food magazine "Gambero Rosso." Part of what sets it apart is the fact that the pasta dough is hung to dry at very low temperatures and painstakingly monitored all the way, making Gentile pasta the very definition of "slow food."
