Dried porcini mushrooms
FUNGHI PORCINI SECCHI.
Italians have a love affair with the versatile porcino mushroom, but you won't find a fresh one anywhere in the off-season! These porcini, gathered in the woodsy hills of the Marche region, are particularly prized and have been cut into thick slices and dried in the traditional manner to retain their full meaty, nutty flavour. Just revive in warm water before adding them to your risotto or pasta dish. Excellent with lamb or roasts.
Soak in warm water with milk for 20 minutes, rinse and use. Store in a cold and dry place, away from light and heat sources, or keep in the freezer. Visit our recipe blog and follow us on social media to get the week's latest recipes using Italy's unique ingredients.
