Crustaceans are well known for being aphrodisiacs, and you have to admit that even just the smell of the sea wrapped up in fresh red prawns is pure rapture! Key to this recipe is not just cooking the prawns just right—so that they’re tender and juicy—but also having a trusted seafood supplier. Put garlic in a pan with extra virgin olive oil on medium/high heat. Once the oil is hot and the garlic nice and golden, add the prawns. As soon as they start to change colour, pour in a splash of white wine. Wait for the alcohol to evaporate, add salt and cook with a lid on a low flame for two minutes. Remove from the heat and add fresh parsley.
An enticing way to dress this dish is to place the prawns beside a bed of mesculin tossed with organic Sicilian extra virgin olive oil, Campisi artichoke paté and two slices of lemon. Don’t forget to open a bottle of chilled white wine—enjoy!
