Paolo Griffa, the 23 year old chef of “Piccolo Lago”(Little Lake Restaurant) of Verbania won the San Pellegrino Young Chef competition in Italy. The very young winner will be the Italian delegate at the international final at Expo Milan 2015 in June. The jury, composed of the best chefs from around Italy have been impressed by the high level quality of all the dishes they have tasted. The young chef's winning dish was "tripe and foie gras". The Young Chef competition was hosted during the “Identità Golose” (Gourmand Identity) Festival in Milan this week.
